The only difference between brown and white eggs is the color of the shell. They basically taste the same and have the same functional properties. The difference is the breed of chicken that lays the eggs. Commercial chickens that have white feathers and white earlobes lay white-shelled eggs. Commercial chickens that have red feathers and red earlobes lay brown-shelled eggs.
Chicken eggs can taste different based on their diets, such as ones from chickens that eat too much garlic. Like us, we may all look different on the outside but are inside we are all basically the same too.
There are chicken breeds that lay other colors of eggs. For example, the Araucana breed is a South American breed in which the hens lay a blue-shelled egg. The Ameraucana, which was developed from the Araucana breed, have hens that lay light blue, light green or light pink colored eggs.
